Our company is situated within the farm La Casa Colonica, from which I.G.T. wine derives and where the vineyards, which extend beyond Terontola in the municipality of Cortona, can be found and where D.O.C. Cortona is produced; the cellar’s head office. The People of Reference Stefania Mezzetti, owner The Vineyards The art of winemaking starts in spring when the vines are accurately tied and pruned. These operations are carried out with such care that it’s astounding. In fact, it is from here that the final product is determined. An accurate and meticulous method of pruning will determine the product of the vines and the quality of the grapes. Harvesting is always greeted as a feast day; we all meet at the wine’s ensign and walking through the rows we relate old and new village stories. The grapes are transported to the cellar where they are pressed and separated from the stalks; the achieved product, the ‘must’, is placed in vats with care for fermentation where it will remain to rest for approximately a week. At the end of this period the skins are separated by pouring the must into oak barrels in which it will be left until spring to make sure that, through a natural process, the sugar will be transformed into alcohol.
