Art. 4. Regulations for Viticulture

4.1 – Natural Environmental Conditions
Environmental conditions of the vineyards, destined for the production of wines from controlled place of origin (D.O.C.) Cortona, have to be normal in the area and certified to confer the grapes with specific characteristics of quality.  Excessively humid and insufficiently sunny lands are to be excluded.

4.2 – Density of Plantation
For new plantations and re-plantations, the density of vinestocks per hectare must not be inferior to 3,300.

4.3 – Types of Growing and Restoration of Installation
The permitted types of plant growing are saplings, spur pruning, cane and arched cane pruning, and in general, the types of growing already used in the area, with the exclusion of extended types of growing.  Restoration of the plant is adequate to the type of growing.

4.4 -  Pruning System
Pruning, taking into consideration the above-mentioned growing of the vines, must be long, short and mixed.

4.5 -  Irrigation, Forcing
Any form of straining is not allowed.  Relief irrigation is permitted.

4.6 – Yield per hectare and natural minimum volume
The maximum production of grapes per hectare and the natural minimum volume is as follows :

Even in exceptionally favourable years, the yield will have to be brought to the above-mentioned limits, provided that the global production does not exceed 20% of the same limits, keeping firm the limits between the grape/wine yield for the quantities mentioned. For vineyards in promiscuous cultivations, the maximum production of grapes per hectare must be brought to the effective surface taken up by the vine.
