Art. 6. Characteristics

The wines, mentioned in Art.1 above, at the moment of introduction on the market, have to correspond to the following characteristics :
 
"Cortona" Chardonnay:
Colour: straw yellow;
Smell: fruity scent with a slightly aromatic background;
Taste: dry and harmonic, elegant;
Alcohol content: 11,00% vol;
Minimum total acidity: 5 g/l;
Minimum net dry extract: 15,0 g/l.

"Cortona" Grechetto:
Colour: straw yellow;
Smell: fresh, delicate, characteristic, slightly aromatic;
Taste: dry and harmonic;
Alcohol content: 11,00% vol;
Minimum total acidity: 5 g/l;
Minimum net dry extract: 15,0 g/l.

"Cortona" Pinot Bianco:
Colour: straw yellow;
Smell: delicate, fine, characteristic;
Taste: dry and harmonic, elegant;
Alcohol content: 11,00% vol;
Minimum total acidity: 5 g/l;
Minimum net dry extract: 15,0 g/l.

"Cortona" Riesling Italico:
Colour: straw yellow;
Smell: intense, aromatic, characteristic;
Taste: dry and aromatic with an intense aromatic aftertaste;
Alcohol content: 11,00% vol;
Minimum total acidity: 5 g/l;
Minimum net dry extract: 15,0 g/l.

"Cortona" Sauvignon:
Colour: straw yellow
Smell: intense, elegant, characteristic with an aromatic background;
Taste: dry and harmonic, elegant;
Alcohol content: 11,00% vol;
Minimum total acidity: 5 g/l;
Minimum net dry extract: 15,0 g/l.

 

"Cortona" Rosato:
Colour: between rosé and red, not strong, without purple reflections;
Smell: fruity with a delicate smell
Taste: dry, delicate and harmonic;
Alcohol content: 11,00% vol;
Minimum total acidity: 4,5 g/l;
Minimum net dry extract: 17,0 g/l.

"Cortona" Cabernet Sauvignon:
Colour: between ruby red and garnet;
Smell: intense, characteristic, spicy;
Taste: full bodied and harmonic, dry;
Alcohol content: 12,00% vol;
Minimum total acidity: 4,55 g/l;
Minimum net dry extract: 20,0 g/l.

"Cortona" Gamay:
Colour: from ruby red to garnet;
Smell: smooth, intense, characteristic;
Taste: dry and harmonic;
Alcohol content: 12,00% vol;
Minimum total acidity: 4,55 g/l;
Minimum net dry extract: 20,0 g/l.

 

"Cortona" Merlot:
Colour: lively garnet, at times with purple reflections, tending to become brick red with                               ageing;
Smell: scent of small fruits, with eventual hint of grass;
Taste: dry, harmonic and full bodied;
Alcohol content: 12,00% vol;
Minimum total acidity: 4,5 g/l;
Minimum net dry extract: 20,0 g/l.

"Cortona" Pinot Nero:
Colour: from ruby to garnet
Smell: intense, smooth;
Taste: dry, full-bodied, characteristic;
Alcohol content: 12,00% vol;
Minimum total acidity: 4,5 g/l;
Minimum net dry extract: 20,0 g/l.

"Cortona" Sangiovese:
Colour: from ruby red with a tendency to become red-orange with ageing;
Smell: smooth, intense and elegant;
Taste: dry and harmonic
Alcohol content: 12,00% vol;
Minimum total acidity: 4,5 g/l;
Minimum net dry extract: 20,0 g/l.

"Cortona" Syrah:
Colour: from ruby red to garnet;
Smell: characteristic, elegant;
Taste: dry and harmonic;
Alcohol content: 12,00% vol;
Minimum total acidity: 4,5 g/l;
Minimum net dry extract: 20,0 g/l.

"Cortona" Vin Santo:
Colour: from golden to intense amber;
Smell: intense ethereal characteristic of mature fruit;
Taste: smooth with intense roundness;
Alcohol content: 17,00%, of which at least 2% to carry out;
Minimum total acidity: 4,5 g/l;
Minimum net dry extract: 24,0 g/l.

"Cortona" Vin Santo riserva:
Colour: from golden to intense amber;
Smell: intense ethereal characteristic of mature fruit;
Taste: full, smooth with intense roundness;
Alcohol content: 17,00% of which a minimum of 14,5% carried out and a minimum of 2,5% to be carried out;
Minimum total acidity: 4,5 g/l;
Minimum net dry extract: 24,0 g/l.

"Cortona" Vin Santo Occhio di Pernice:
Colour: between amber and topaz with a reddish shade that becomes brown with ageing;
Smell: intense, rich, complex, of mature fruit and other shades;
Taste: distinguished, persistent with a sweet aftertaste;
Alcohol content: 18,00% of which a minimum of 15% carried out and a minimum of 4,5% to be carried out;
Minimum total acidity: 4,5 g/l;
Minimum net dry extract: 25,0 g/l.

It is the authority of the European Commission’s Ministry of Agricultural Policies for the protection and valorisation of the place of origin and the typical geographic indications of wines, to modify the total limit of acidity and the net dry extract, by its own decree.
